MEALS IN MINUTES WITH HEARTLAND GOURMET

Mothers Day & Celebrate Cinco de Mayo with TGC- May 2008

 

There is a lot to celebrate this May!  Nowadays, Cinco de Mayo is celebrated though out the country.  Bring the southwest flavors into your home with our Mexican and Tex-Mex Mixes.  Spice it up a little for mom!!!  Make her day special with one of our super easy mixes & deserts for a fantastic Mother’s Day dinner (The key here is she does not have to cook or clean up!!!).  With a large variety of choices, from a savory appetizer to a refreshing cool desert, you’ve got the whole meal covered

 

DIPS & SALSA

 

Black Bean and Corn Salsa Dip-One of our favorite creations! A true gourmet dip that requires a can of black beans, a can of corn, 2 tomatoes, lemon juice, and olive oil. Serve with tortilla chips. Makes 3 cups of dip.  Mix 1 can black beans, 1 can corn, 2 large tomatoes (chopped), 1/3 cup virgin olive oil, 1/3 cup lime or lemon juice, and contents of package. Mix and chill overnight. Serve with tortilla chips or on tacos.< /SPAN>

 

Chili Cheese Dip-A great blend of spices make this dip taste delicious. Add sour cream. Yields 2 (1 cup) servings.  Mix1/2 mix and 1 cup sour cream. Chill at least 2 hours before serving.

 

Guacamole Dip-Mix half package with mashed avocado, chopped tomato, and lemon juice. For variation, mix in sour cream, cream cheese, or black olives. Instruction Mix1/2 mix, 1 small chopped tomato, 1 tsp. lemon juice, and1 smashed ripe avocado. For variation: Add 3 oz softened cream cheese, or ½ cup chopped black olives, or ½ cup sour cream.

 

Mexican Fiesta Dip-Our most popular dip! A mildly spicy blend of flavors, this mix makes 12 (8 oz) dips. Requires 1 cup sour cream or 8 oz cream cheese for each use.  Combine 1 tsp or up to 1 Tbsp. of mix with 1 cup sour cream. Refrigerate for 2-4 hours before serving.

 

Queso With a Kick-We think you will love this queso seasoning. You'll think you are at your favorite Mexican food restaurant! Add Mexican Velveeta and Rotel.  Heat 1 lb Mexican Velveeta, ½ can Rotel, (chopped tomatoes with green peppers) and seasoning mix until cheese is melted. Add a little water if desired. Makes 4 cups.

 

 

Trent's Spicy Salsa or Salsa Cream Cheese Dip-Uncle Trent's favorite salsa! Add it to cream cheese to make another favorite dip! Add Mexican tomatoes, Rotel, or chopped tomatoes (depending on how hot you want it!) Each package makes 2 different dips.  For Spicy Salsa- mix1/2 mix and 10 oz can Mexican tomatoes, tomatoes with green chilies, or chopped tomatoes (depending on how hot you want it!) Blend in blender if desired. Chill for 1 hour before serving. For Salsa cream cheese dip- Mix ½ mix, ½ can chopped tomatoes, and 1 cup softened cream cheese. Chill for 2 hours before serving .

 

SOUPS

 

Taco "Soup"reme Soup-From our Texas family to yours- one of our family favorites! Just add ground meat, can corn, tomato sauce, Rotel, and water. Makes 12 cups.  Empty beans into colander. Rinse beans and place in large microwave safe dish. Cover with water 1-2 inches over beans. Microwave on high 15 minutes. Drain and rinse beans well. Place beans, seasoning packet, 6 cups water, 1 lb. cooked brown meat, 2 cans corn, 1 small can tomato sauce, and 1 can Rotel (chopped tomatoes with green chilies) in large pot. Stir well, bring to a boil, lower heat, cover, and simmer for 1- 1 ½ ho urs or until beans are tender, stirring occasionally. Optional: serve with chips, grated cheese, and top with sour cream. Makes 16 cups.

 

Tex-Mex Soup-If you like enchiladas, you'll love this new soup! It is based from our Spicy Flautaus in Chicken Broth, and we added a few ingredients. Requires water and frozen taquitos. Optional- top with grated cheese and sour cream. Makes 6 cups of broth for taquitos. Also good seasoning for pork chops!  Combine 6 cups of water and seasoning packet. Bring to a boil and simmer on low heat for an hour. Bake Taquitos in oven per directions. Place cooked and cut taquitos in soup bowls and add broth. Optional: top with grated cheese and sour cream. Makes 6 cups of broth. Also great s easoning for pork chops.

 

Tortilla Soup-This is our most popular soup! It has a zesty flavor, but not hot. Just add water. Yields 4 cups Boil 4 cups of water in saucepan. Empty soup mix into water. Stir and boil for 4 more minutes or until rice and vegetables are tender. Yields 4 cups.

 

SALADS

 

Texas Macaroni Salad-Add mayonnaise for a slightly spicy, Texas kick! Instruction Mix seasoning packet with mayonnaise. Serve warm or cold.

 

MAIN DISHES

 

Chili (Ingredients layered in a Jar)-This makes a beautiful gift! The seasonings are carefully arranged at the bottom of the jar to look like beautiful sand art. Requires onions, Rotel, tomato juice, ground beef, brown sugar, tomato paste, and water. Beware- this makes 35 cups!  In a very large stock pot place chili mix, 1 cup chopped onions, ½ cup brown sugar, 16 cups water, 1 (49 oz) can tomato juice, 3 cans Rotel (chopped tomatoes with green chilies) , and 2 lbs browned ground beef. Bring to a boil, reduce heat, and simmer or 2-2 ½ hours or until beans are tender. Add 1 (12oz) can tomato paste and continue simmering for another ½ hour. Makes 35 cups!

 

Mexican Meatloaf-This is just one of the many products we're proud to put our name on! This popular recipe has been in the family for years. Requires picante sauce, grated cheese, green chilies, and ground meat. Makes 9x5 loaf Instruction Combine 1 lb ground beef, half cup picante sauce, and contents of package. Mix well and press into ungreased 9x5 loaf pan. Combine ½ cup picante sauce, ½ can chopped green chiles, and ½ cup cheese and pour over top. Bake 375 for 30 minutes. 

 

Mexican Flavored Chicken Coating-Dip your chicken into an egg and milk mixture and then dredge in this yummy coating! Also great with pasta sauce and mozzarella cheese. Instruction Dip chicken breasts into mixture of 1 egg and ¼ cup milk. Dredge in contents of package. Place in a greased pan and pour melted butter over top. Bake at 400 for 45 minutes or until crispy golden brown. Also great on pork chops!

 

MEAT RUBS & SEASONINGS

 

Big Shan's Chicken Fajita Seasoning-A seasoning mix created by my husband, nicknamed Big Shan. Spicy with a good Mexican flavor.

 

Tex-Mex Rub-Unique blend of seasonings that's not too spicy. Sprinkle and rub the mix according to taste preferences on both sides of beef or pork before grilling, broiling, or frying.

 

West Texas Inferno-Just like its name implies, this ones HOT! Sprinkle and rub the mix according to taste preferences on both sides of beef, pork, chicken, or turkey before grilling, broiling, baking or frying.

 

REFRESHING DESERTS

 

Key Lime Pie-A best seller!! Requires 2 (8oz) cream cheese, 8 oz cool whip, and a graham cracker crust. For creamier, richer pie, add sweetened condensed milk!   Mix 2 (8oz) blocks cream cheese with mix using an electric mixer. Stir in 8oz carton of thawed Cool Whip. Pour into graham cracker crust. Chill for 4 hours in refrigerator or 2 hours in freezer. For creamier, richer pie, substitute sweetened condensed milk for one 8 oz cream cheese!

 

Peanut Butter Pie-Easy and delicious pie! You don’t even have to add peanut butter!  Soften 8 oz cream cheese, spinkle mix on top and mix well. Add 1 tsp vanilla and 8 oz Cool Whip. Pour into chocolate graham cracker crust.Mix in Reese’s Cups for extra treat!

 

Lemonade Pie-So refreshing and easy! Requires 2 (8oz) cream cheese, 8 oz Cool Whip, and graham cracker crust.  Mix 2 (8oz) blocks cream cheese with mix using an electric mixer. Stir in 8oz carton of thawed Cool Whip. Pour into graham cracker crust. Chill for 4 hours in refrigerator or 2 hours in freezer. For creamier, richer pie, substitute sweetened condensed milk for one 8 oz cream cheese!

 

JUST A LATE NIGHT SNACK

 

Jalepeno Popcorn Seasoning-The taste of jalepeno, but not too hot. Add sour cream for a great dip too!  Sprinkle according to taste preferece on hot popcorn.
